These Italian sub sandwich skewers are a quick, flavorful, and fuss-free party snack that combines cured meats, fresh veggies, and cheese in bite-sized, crowd-pleasing portions.

Ingredients

  • Salami slices, thinly sliced (classic Genoa salami recommended)
  • Capicola or ham, thinly sliced
  • Provolone cheese, cut into small cubes
  • Italian bread, cut into bite-sized cubes (day-old bread preferred)
  • Cherry tomatoes, halved
  • Italian pepperoncini peppers, sliced
  • Black olives, pitted and halved (optional)
  • Fresh basil leaves or arugula
  • Extra virgin olive oil (3 tablespoons)
  • Red wine vinegar (1 tablespoon)
  • Dried Italian herbs (½ teaspoon)
  • Garlic powder (¼ teaspoon)
  • Salt and freshly ground black pepper

Instructions

  1. Prepare the ingredients: Wash and halve the cherry tomatoes. Slice the pepperoncini peppers and olives. Cube the provolone cheese into roughly 1-inch pieces. Cut the Italian bread into bite-sized cubes about 1 inch.
  2. Make the dressing: In a small bowl, whisk together 3 tablespoons of extra virgin olive oil, 1 tablespoon of red wine vinegar, ½ teaspoon dried Italian herbs, ¼ teaspoon garlic powder, and a pinch of salt and pepper. Taste and adjust seasoning if needed. Set aside.
  3. Assemble the skewers: Starting with a piece of salami folded in half, thread it onto the skewer. Follow with a cube of provolone cheese, a piece of bread, a halved cherry tomato, a slice of capicola or ham, a pepperoncini slice, a black olive half, and a fresh basil leaf or arugula. Repeat pattern if your skewers are longer and finish with a bread cube to keep everything secure. Each skewer should have about 6–8 pieces depending on size.
  4. Dress the skewers: Place the skewers on your serving platter and drizzle the prepared dressing evenly over them. You can also toss the bread cubes and veggies lightly in the dressing before assembling for extra flavor.
  5. Chill or serve: Let the skewers rest for 10 minutes at room temperature to let the flavors mingle. Alternatively, refrigerate for up to an hour before serving. Bring them out 10 minutes before guests arrive, so they’re not too cold.
  6. Final touches: Just before serving, sprinkle a little freshly cracked black pepper and, if you like, some shaved Parmesan or a few red pepper flakes for a hint of heat.

Use slightly stale bread to prevent sogginess. Toss bread cubes and veggies lightly in dressing before assembling for extra flavor.
