  • Single-serving bags of Fritos or similar corn chips (about 2 oz each)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning (store-bought or homemade blend of chili powder, cumin, paprika, oregano)
  • 1 cup shredded cheddar cheese (about 100 g)
  • ½ cup sour cream (120 ml)
  • 1 medium diced tomato, seeded
  • 1 cup chopped lettuce (about 30 g)
  • Jalapeños, sliced (optional, to taste)
  • A handful fresh cilantro, chopped
  • Lime wedges for serving

Instructions

  1. Heat the skillet over medium-high heat and add about 1 tbsp oil if using lean beef.
  2. Add chopped onion and sauté for 2-3 minutes until translucent.
  3. Add minced garlic and stir for about 30 seconds until fragrant but not browned.
  4. Add ground beef and break apart with spatula. Cook for 6-8 minutes until fully browned with no pink spots.
  5. Drain excess fat from the pan carefully.
  6. Sprinkle in taco seasoning and stir to coat beef evenly. Add about ¼ cup water and simmer for 3-4 minutes until slightly thickened.
  7. While beef simmers, prepare toppings: dice tomato, chop lettuce, slice jalapeños if using, and shred cheese if needed.
  8. Open a single-serving bag of chips and spoon about ½ cup (120 g) of seasoned beef into the bag.
  9. Layer shredded cheese, diced tomatoes, chopped lettuce, and a dollop of sour cream (1-2 tbsp). Add jalapeño slices and cilantro to taste.
  10. Serve with lime wedges and eat directly from the bag using a fork.

Notes

Assemble tacos just before serving to prevent chips from getting soggy. Use mini Fritos bags for best chip durability. For a healthier option, substitute sour cream with Greek yogurt. Variations include vegetarian options with black beans or lentils, and spicy upgrades with chipotle powder.
