A quick and flavorful miso glazed salmon recipe that is perfect for busy weeknights or entertaining, delivering a sweet-savory umami punch with a caramelized finish.

Ingredients

Scale
  • 4 skin-on salmon fillets, about 6 oz (170 g) each, fresh or thawed
  • 3 tablespoons white miso paste
  • 2 tablespoons mirin
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh grated ginger (optional)
  • 1 small clove garlic, minced (optional)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a mixing bowl, whisk together white miso paste, mirin, soy sauce, honey, sesame oil, grated ginger, and minced garlic until smooth. Add a splash of water if the glaze is too thick.
  3. Pat the salmon fillets dry with paper towels.
  4. Place the salmon skin-side down on the prepared baking sheet. Brush each fillet generously with the miso glaze.
  5. Bake for 10-12 minutes until the salmon is cooked through and flakes easily with a fork. The glaze should bubble and caramelize slightly.
  6. Optional: Broil for 1-2 minutes for a crispier top, watching closely to avoid burning.
  7. Remove from oven and let rest for a minute or two. Sprinkle with sliced green onions and toasted sesame seeds before serving.

Notes

Pat salmon dry before glazing to ensure a sticky, caramelized finish. Adjust sweetness of glaze to taste to avoid burning. Salmon continues cooking after removal from oven; aim for 125-145°F internal temperature depending on preference. Leftovers keep well refrigerated for up to 2 days and reheat gently to maintain moisture.
