  • 1 cup (150g) mixed berries (fresh or frozen)
  • Pinch of salt

Instructions

  1. In a medium bowl or jar, combine chia seeds, milk, maple syrup, vanilla extract, and salt. Whisk vigorously for 30 seconds. Let sit for 5 minutes, then whisk again to break up clumps.
  2. Mash ½ cup of the berries with a fork to create a chunky puree.
  3. Spoon half of the chia pudding mixture into jars. Add a layer of mashed berries, then top with remaining pudding. Alternatively, stir mashed berries directly into pudding for a uniform color.
  4. Top with remaining whole berries.
  5. Cover jars and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the pudding. If too thick, add a splash of milk; if too thin, add 1 tablespoon chia seeds and let sit for another hour.
  7. Add desired toppings (e.g., honey, granola, yogurt) and serve cold.
