  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 tablespoons fresh chives, chopped
  • 3 tablespoons honey (raw or wildflower preferred)
  • Flaky sea salt (to taste)
  • Freshly ground black pepper (to taste)
  • Crusty bread or crackers for serving

Instructions

  1. Let 1 cup (225g) of unsalted butter sit at room temperature for about 30 minutes until soft but not melting.
  2. Finely chop 2 tablespoons thyme, 1 tablespoon rosemary, and 2 tablespoons chives.
  3. In a medium bowl, combine softened butter with chopped herbs, 1/4 teaspoon flaky sea salt, and a few grinds of black pepper. Mix gently until evenly incorporated but do not overmix.
  4. Transfer the herb butter onto a serving board or plate and spread into an approximately 8×6 inch (20×15 cm) rectangle using an offset spatula or butter knife.
  5. Generously drizzle 3 tablespoons of honey over the top of the butter, allowing it to pool in some areas.
  6. Sprinkle a pinch more flaky sea salt and a few twists of black pepper over the honeyed butter.
  7. Arrange sliced crusty bread or crackers around the board and serve.

Notes

Do not microwave butter to soften; leave it at room temperature for about 30 minutes. Use flaky sea salt like Maldon for best texture. Prepare herb butter ahead and refrigerate, then spread and drizzle honey just before serving. Experiment with different herbs or add-ins like citrus zest or nuts for variation.
