Instructions

  1. Prepare the glaze: In a mixing bowl, whisk together apricot preserves, honey, Dijon mustard, olive oil, minced garlic, and lemon juice until smooth. Stir in herbs if using. Takes about 5 minutes.
  2. Season the chicken: Pat chicken breasts dry with paper towels, then season both sides generously with salt and freshly ground black pepper. Takes about 3 minutes.
  3. Preheat the grill: Heat grill to medium-high (around 400°F). If using charcoal, wait until coals are covered with white ash (10-15 minutes). Lightly oil the grates to prevent sticking.
  4. Grill the chicken: Place chicken on grill and cook 5-6 minutes per side depending on thickness. Avoid moving too much for good grill marks. After flipping, brush honey mustard glaze generously on cooked side, then again after flipping. Total grilling time about 12-14 minutes.
  5. Check for doneness: Use a meat thermometer inserted into thickest part of chicken; it should read 165°F. If no thermometer, cut into thickest part to ensure juices run clear.
