  • 3 tablespoons honey (raw, unfiltered preferred)
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter, melted (plant-based butter for dairy-free)
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions

  1. Peel the pineapple carefully and core it. Slice into ½-inch (1.3 cm) thick rings or wedges.
  2. In a mixing bowl, whisk together honey, ground cinnamon, melted unsalted butter, fresh lime juice, vanilla extract (optional), and a pinch of salt until smooth and combined.
  3. Preheat your grill to medium-high heat (about 375°F). If using a grill pan, preheat on medium-high heat.
  4. Use a basting brush to coat both sides of the pineapple slices with about half of the cinnamon honey glaze.
  5. Place pineapple slices on the grill and cook for 3-4 minutes per side, brushing occasionally with the remaining glaze, until golden brown with caramelized grill marks.
  6. Check that the pineapple is tender but not mushy; remove promptly if it becomes too soft.
  7. Transfer the grilled pineapple to a serving dish and optionally drizzle with any leftover glaze. Serve warm.

Notes

Use ripe pineapple with a golden-yellow color for best flavor and texture. Brush glaze generously but evenly to avoid flare-ups. Keep grill temperature medium-high to prevent burning the glaze. Flip pineapple slices gently with tongs to keep them intact. Optionally add smoked paprika or cayenne pepper to the glaze for a smoky or spicy twist. Leftovers keep well refrigerated for up to 3 days and reheat gently.
