  • 2 1/4 teaspoons (7g) instant yeast
  • 3/4 cup (180ml) warm water (about 110°F/43°C)
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon (6g) salt
  • 1 teaspoon (4g) sugar
  • 2025 pepperoni slices
  • 2 cups (200g) shredded mozzarella cheese
  • 3/4 cup (180ml) tomato sauce
  • 34 tablespoons (45-60ml) hot honey (honey infused with crushed red pepper flakes)
  • Optional garnishes: fresh basil leaves, crushed red pepper flakes, grated Parmesan cheese

Instructions

  1. In a large mixing bowl, combine 2 1/4 cups (280g) all-purpose flour, 2 1/4 teaspoons (7g) instant yeast, 1 teaspoon (6g) salt, and 1 teaspoon (4g) sugar. Mix briefly to combine.
  2. Pour in 3/4 cup (180ml) warm water (about 110°F/43°C) and 2 tablespoons (30ml) olive oil. Stir with a wooden spoon or spatula until a shaggy dough forms.
  3. Turn dough onto a lightly floured surface and knead for about 8 minutes until smooth and elastic. Add flour sparingly if sticky.
  4. Form dough into a ball, place in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let rise in a warm spot for 45 to 60 minutes until doubled in size.
  5. Preheat oven to 475°F (246°C). If using a pizza stone, place it in the oven during preheating.
  6. Punch down the risen dough and transfer to a floured surface. Roll or stretch into a 12-inch (30cm) circle. Transfer to a parchment-lined baking sheet or preheated pizza stone.
  7. Spread 3/4 cup (180ml) tomato sauce evenly over the dough, leaving a small border for the crust.
  8. Sprinkle 2 cups (200g) shredded mozzarella evenly, then layer 20-25 pepperoni slices on top.
  9. Bake the pizza for 12-15 minutes until crust is golden and crisp, cheese is bubbly, and pepperoni edges are slightly curled.
  10. While baking, gently warm 3-4 tablespoons (45-60ml) honey in a small saucepan or microwave. Stir in a pinch of crushed red pepper flakes if desired.
  11. Remove pizza from oven and immediately drizzle the warm hot honey over the top. Add fresh basil leaves and a sprinkle of Parmesan if desired.
  12. Let pizza rest for 2-3 minutes before slicing into 8 pieces and serving.

Notes

Watch crust edges closely during baking to avoid burning. Warm honey gently to a pourable consistency but do not boil. Use room temperature ingredients for best results. Let dough rest properly for a crispy crust. Preheat baking sheet if no pizza stone is available to mimic stone heat retention.
