Flavorful Lemon Garlic Shrimp Pasta

A quick and easy shrimp pasta dish featuring a bright lemon garlic sauce with fresh herbs, perfect for a light yet satisfying meal.

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • Salt and freshly ground black pepper to taste
  • 8 ounces spaghetti or linguine
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 1/4 cup white wine or vegetable broth
  • 1/4 cup reserved pasta cooking water
  • 1/4 cup unsalted butter
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • Zest of 1 lemon
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of spaghetti or linguine and cook according to package instructions until al dente (about 8-10 minutes). Reserve 1/4 cup of pasta water, then drain the pasta and set aside.
  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season shrimp with salt and black pepper. Sauté shrimp for about 2 minutes per side until pink and just cooked through. Remove shrimp from the pan and set aside.
  3. Reduce heat to medium. Add minced garlic to the same skillet and sauté for 30 seconds until fragrant. Pour in 1/4 cup white wine or broth and 1/4 cup fresh lemon juice. Let simmer and reduce slightly for about 2 minutes.
  4. Stir in 1/4 cup butter and red pepper flakes if using, swirling until the sauce is silky and combined.
  5. Add the drained pasta back to the skillet, tossing to coat well in the sauce. If the sauce is too thick, add reserved pasta water 1 tablespoon at a time until desired consistency is reached. Gently stir in the cooked shrimp to warm through.
  6. Remove skillet from heat. Toss in chopped parsley, basil, and lemon zest. Stir gently to combine. Adjust seasoning with salt and pepper if needed.
  7. Serve immediately, topped with grated Parmesan cheese and extra parsley if desired.

Do not overcook shrimp to avoid rubberiness; add fresh herbs off the heat to preserve brightness; reserve pasta water to loosen sauce; use fresh garlic for best flavor; for dairy-free, substitute butter with olive oil or vegan butter; gluten-free pasta can be used as a substitute.
