  • 2 large roasted red or poblano peppers, skin removed and chopped
  • 1 crushed One Chip Challenge chip (handle with care)
  • 8 oz (225g) cream cheese, softened
  • ½ cup (120ml) sour cream
  • ¼ cup (60ml) mayonnaise
  • 1 tsp (6g) garlic powder
  • 1 tsp (6g) onion powder
  • ½ tsp (1g) smoked paprika
  • 1 tbsp (15ml) fresh lime juice
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  1. Roast the peppers over an open flame or under the broiler until charred all over (about 8-10 minutes), turning occasionally. Place in a bowl and cover with plastic wrap for 10 minutes to steam.
  2. Peel off the skins carefully, remove seeds, and finely chop the peppers. Set aside about 1 cup (150g).
  3. Place the One Chip Challenge chip in a small ziplock bag and crush gently into small pieces. Use gloves or wash hands after handling.
  4. In a mixing bowl, beat the softened cream cheese until smooth and creamy, about 2-3 minutes. Add sour cream and mayonnaise, mixing until fully combined.
  5. Stir in garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well.
  6. Fold in the chopped roasted peppers and crushed chip, stirring gently but thoroughly.
  7. Add fresh lime juice and fold in chopped cilantro if using.
  8. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let flavors meld and the dip thicken.
  9. Give it one last stir before serving. Serve with tortilla chips, fresh veggies, or crunchy crackers.

Notes

Handle the One Chip Challenge chip with gloves or crush it in a sealed bag to avoid contact with skin or eyes. Don’t skip chilling the dip as it improves flavor and texture. For a dairy-free version, substitute cream cheese and sour cream with coconut cream and vegan mayo. If the dip is too thick after chilling, stir in a teaspoon of milk or lime juice to loosen it.
