A quick and easy homemade pizza featuring a sweet and smoky bourbon BBQ sauce blended with peach preserves, topped with grilled chicken, fresh peaches, mozzarella, and peppery arugula for a perfect summer meal.

  • 1 12-inch pizza dough (store-bought or homemade)
  • 2 cups cooked shredded or chopped chicken (grilled or rotisserie)
  • 1/2 cup barbecue sauce (smoky, slightly sweet variety)
  • 2 tablespoons peach preserves or jam
  • 1 tablespoon bourbon
  • 1 medium fresh peach, thinly sliced
  • 1 to 1 1/2 cups shredded whole milk mozzarella cheese
  • 1/4 cup thinly sliced red onion
  • 1 cup packed fresh arugula
  • Olive oil (for brushing crust and drizzling over arugula)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven before preheating.
  2. In a small bowl, combine 1/2 cup barbecue sauce, 2 tablespoons peach preserves, and 1 tablespoon bourbon. Stir until smooth and set aside.
  3. Toss 2 cups shredded cooked chicken in about half of the peach bourbon BBQ sauce mixture. Season lightly with salt and pepper.
  4. Roll out the pizza dough on a floured surface to roughly 12 inches in diameter. Transfer it to a piece of parchment paper.
  5. Brush the dough’s edges lightly with olive oil.
  6. Spread the remaining sauce evenly across the dough, leaving about a 1-inch border for the crust.
  7. Scatter the sauced chicken evenly over the pizza, followed by thin peach slices and red onion.
  8. Sprinkle mozzarella cheese generously over all the toppings.
  9. Bake the pizza on the preheated pizza stone or baking sheet for 12-15 minutes, or until the crust is golden and cheese is bubbling and slightly browned.
  10. Remove from oven and immediately top with fresh arugula. Drizzle a little olive oil over the arugula, and add a pinch of salt and pepper.
  11. Let the pizza rest for 2-3 minutes before slicing.

Notes

Pat peaches dry before adding to avoid soggy crust. Use a hot oven and preheated pizza stone or baking sheet for a crispy crust. Add arugula fresh after baking to maintain peppery crunch. Can substitute bourbon with apple juice or peach nectar for less alcohol flavor. For gluten-free, use cauliflower crust. Vegetarian option: replace chicken with grilled tofu or roasted mushrooms.
