  • 1/4 cup (30 g) dried cranberries
  • 1/4 cup (60 ml) caramel sauce (store-bought or homemade)

Instructions

  1. Heat 2 tablespoons (30 ml) of neutral oil in a large heavy-bottomed pot over medium-high heat. Add 3 popcorn kernels and cover with a lid. Once these test kernels pop, add the remaining 1/2 cup (90 g) of kernels in an even layer. Cover and gently shake the pot occasionally to keep kernels moving. When popping slows to about 2 seconds between pops (about 3-4 minutes), remove from heat immediately to avoid burning. Pour the popped corn into a large bowl, leaving any un-popped kernels behind.
  2. Drizzle 4 tablespoons (55 g) of melted unsalted butter over the popcorn. Toss gently to coat evenly.
  3. In a separate small bowl, combine 1/4 cup (50 g) brown sugar, 2 tablespoons (30 ml) honey, and 1 teaspoon cinnamon. Warm slightly in the microwave or on the stove for easier mixing. Drizzle this over about half the popcorn and toss to coat. Sprinkle mini chocolate chips and toasted coconut flakes on top.
  4. In another bowl, mix 1/3 cup (30 g) grated Parmesan, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, and optional 1/4 teaspoon chili flakes. Sprinkle this seasoning blend over the remaining popcorn. Add chopped roasted nuts and mini pretzels for crunch.
