Ingredients

Scale
  • 4 cups (480g) all-purpose flour
  • 2 1/4 teaspoons active dry yeast (one packet)
  • 1 cup (240ml) warm milk (about 110°F/43°C)
  • 1/4 cup (57g) unsalted butter, melted, plus extra for brushing
  • 1/4 cup (85g) honey
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon (6g) salt
  • 2 large eggs, room temperature
  • 1/4 cup (60ml) warm water

Instructions

  1. Proof the yeast: In a small bowl, combine 1/4 cup (60ml) warm water and 2 1/4 teaspoons active dry yeast with 1 teaspoon sugar. Stir gently and let sit for 5–10 minutes until foamy.
  2. Mix wet ingredients: In a large mixing bowl, whisk together 1 cup (240ml) warm milk (110°F/43°C), 1/4 cup (57g) melted butter, 1/4 cup (85g) honey, 2 large eggs, and salt.
  3. Add yeast mixture: Pour the foamy yeast into the wet ingredients and stir gently to combine.
  4. Incorporate flour: Gradually add 4 cups (480g) of all-purpose flour, one cup at a time, mixing until the dough comes together. It should be soft but not sticky.
  5. Knead the dough: Turn the dough onto a lightly floured surface and knead for about 8-10 minutes (or 5–7 minutes in a mixer) until smooth and elastic.
  6. First rise: Place the dough in a greased bowl, cover, and let rise in a warm spot for 1 to 1.5 hours, or until doubled in size.
  7. Shape the rolls: Punch down the dough, divide into 12 equal pieces (about 2 ounces or 57g each), and shape each into a smooth ball.
  8. Second rise: Arrange dough balls in a greased 9×13-inch baking pan, cover loosely, and let rise for 30-45 minutes until puffy.
  9. Bake: Preheat oven to 375°F (190°C). Bake rolls for 18-22 minutes until golden brown. Tent with foil if tops brown too quickly.
  10. Brush with honey butter: While rolls are warm, brush generously with melted butter mixed with a tablespoon of honey.
  11. Cool slightly and serve: Let rolls cool in the pan for 10 minutes before serving warm.

Notes

Use milk and water at about 110°F to activate yeast properly. Knead dough until smooth and elastic. Cover dough during rises to prevent drying. Brush rolls with honey butter immediately after baking for best flavor and shine. For quicker preparation, an overnight rise in the fridge after shaping is possible. Substitute bread flour for chewier texture or almond milk for dairy-free option.
