Instructions

  1. Toast 2 slices of sourdough bread until golden brown and crispy, about 2-3 minutes.
  2. Cut the ripe avocado in half, remove the pit, and scoop the flesh into a small bowl. Add 1 teaspoon fresh lemon juice and a pinch of salt.
  3. Using a fork, gently mash the avocado until creamy but still a bit chunky.
  4. Spoon the mashed avocado evenly over the toasted bread slices.
  5. Sprinkle 1 to 2 teaspoons of everything bagel seasoning generously over the avocado.
  6. Lightly drizzle about 1 teaspoon of extra virgin olive oil on top.
  7. Add optional toppings if desired: sliced radishes, crushed red pepper flakes, or a soft-boiled egg.
  8. Finish with a pinch of flaky sea salt to taste and serve immediately.

Notes

Use ripe but not overripe avocados to avoid soggy toast. Toast bread until crisp but not burnt. Leave avocado slightly chunky for better texture. Lemon juice prevents browning. Store mashed avocado airtight with plastic wrap pressed on surface if preparing ahead.
