Instructions

  1. Thinly slice the cucumbers into 1/8 inch (3 mm) thick rounds using a mandoline or sharp knife.
  2. Place the sliced cucumbers in a mixing bowl, sprinkle with 1/2 teaspoon salt, toss gently to coat, and let sit for 10 minutes to draw out excess water. Drain any liquid.
  3. In a small bowl, whisk together rice vinegar, soy sauce, sugar, sesame oil, garlic powder, and red pepper flakes if using until sugar dissolves.
  4. Add the drained cucumbers back to the bowl, pour the dressing over, and toss gently but thoroughly to coat every slice.
  5. Sprinkle toasted sesame seeds and optional chopped cilantro or green onions over the top. Chill the salad in the fridge for at least 15 minutes before serving.
  6. Give the salad a quick toss just before plating and serve fresh.
