  • 2 tablespoons (about 30 ml) freshly squeezed lemon juice
  • 1 cup (240 ml) water

Instructions

  1. Wash and prepare peaches: Rinse peaches gently under cool water. Peel the skin off each peach using a sharp paring knife.
  2. Slice peaches: Cut each peach in half, remove the pit, then slice each half into 1/4-inch (about 0.6 cm) thick slices.
  3. Prepare lemon water soak: Mix 1 cup (240 ml) cold water with 2 tablespoons (30 ml) freshly squeezed lemon juice in a large bowl.
  4. Soak peach slices: Submerge peach slices in the lemon water for 5 minutes to prevent browning.
  5. Drain and dry slices: Lift peach slices out of lemon water and spread on a clean kitchen towel or paper towels. Pat dry gently.
  6. Arrange slices for freezing: Line a baking sheet or tray with parchment paper or silicone mat. Place peach slices in a single layer without touching.
  7. Initial freeze: Freeze the tray for 2 to 3 hours until slices are solid.
  8. Transfer to storage: Transfer frozen peach slices into labeled freezer-safe bags or containers, remove as much air as possible, and store flat in the freezer for up to 6 months.

Notes

Use firm yet ripe peaches for best results. Soak slices in lemon water to prevent browning. Freeze slices individually on a tray before bagging to avoid clumping. No need to thaw before blending; toss frozen slices directly into smoothies.
