Fresh Grilled Peach and Burrata Caprese Salad

A quick and easy summer salad featuring smoky grilled peaches paired with creamy burrata cheese, fresh basil, and a tangy balsamic dressing. Perfect for gatherings and light meals.

Ingredients

  • 3 medium fresh peaches, ripe but firm
  • 8 ounces burrata cheese
  • A handful of fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon honey (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 375–400°F).
  2. Rinse and pat dry the peaches. Slice peaches in half and gently remove pits. Cut each half into 2-3 wedges depending on size.
  3. Brush each peach wedge lightly with olive oil to prevent sticking and encourage caramelization.
  4. Place peaches cut side down on the grill. Cook without moving for about 3-4 minutes until grill marks appear and peaches start to soften. Flip and grill the other side for 2 minutes. Peaches should be tender but still hold their shape.
  5. In a small bowl, whisk together 2 tablespoons extra virgin olive oil, 1 tablespoon balsamic vinegar, and 1 teaspoon honey (optional). Season with sea salt and freshly ground black pepper.
  6. Arrange grilled peaches on a serving platter. Tear burrata into chunks and scatter over the peaches. Tuck basil leaves in between.
  7. Drizzle the dressing evenly over the salad. Finish with a sprinkle of sea salt and freshly cracked black pepper.
  8. Serve immediately while peaches are warm and burrata is creamy. Optionally, let sit for 10 minutes to allow flavors to meld.

Notes

Use firm but ripe peaches to avoid mushiness. Oil grill grates or grill pan to prevent sticking. Let burrata sit at room temperature for 10 minutes before assembling for best creaminess. For vegan adaptation, use cashew-based cheese and maple syrup instead of honey.
