A quick and easy summer salad combining juicy nectarines, creamy burrata, fresh basil, and a tangy balsamic glaze for a refreshing and indulgent dish.

Ingredients

  • 3 ripe nectarines, sliced thin
  • 8 ounces (about 225 grams) creamy burrata cheese, torn or sliced
  • 1 cup loosely packed fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Sea salt, a pinch, to taste
  • Fresh ground black pepper, to taste
  • Optional: a handful of toasted pine nuts or sliced almonds

Instructions

  1. Rinse the nectarines under cool water and pat dry. Slice into thin wedges about 1/4 inch (6 mm) thick and set aside.
  2. Remove burrata from packaging and gently tear or slice into generous chunks. Keep at room temperature for about 10 minutes before assembling.
  3. On a serving platter, alternate layers or clusters of nectarine slices and burrata chunks. Scatter fresh basil leaves evenly over the top.
  4. Sprinkle a pinch of sea salt and freshly ground black pepper over the salad.
  5. Drizzle extra virgin olive oil evenly across the salad, followed by a light drizzle of balsamic glaze. Add toasted pine nuts or sliced almonds if desired.
  6. Let the salad sit for 5 minutes at room temperature to allow flavors to meld before serving.

Notes

Use firm but juicy nectarines for best texture. Let burrata rest at room temperature before assembling for creaminess. Pat nectarines dry if very juicy to avoid watery salad. Use a gentle hand when mixing to keep burrata intact. Balsamic glaze can be homemade by reducing balsamic vinegar.
