A quick and easy fresh pool dip board featuring crunchy veggies, creamy dips, and a variety of crackers, perfect for casual gatherings and poolside snacking.

Ingredients

  • Carrots, peeled and cut into sticks
  • Celery stalks, trimmed and sliced
  • Cucumber, sliced into rounds or sticks
  • Bell peppers (red, yellow, or orange), sliced thin
  • Cherry tomatoes, halved
  • Snap peas or sugar snap peas (optional)
  • Hummus (store-bought or homemade)
  • Guacamole or mashed avocado
  • Ranch or Greek yogurt-based dip (homemade or store-bought)
  • Whole grain or multigrain crackers
  • Water crackers or thin wheat crackers
  • Seeded crackers
  • Marinated olives or pickles (optional)
  • Fresh herbs like parsley or dill (for garnish)
  • Cherry pepper rings or sliced radishes (optional)

Instructions

  1. Wash and prep the veggies: rinse all fresh produce under cold water. Peel carrots and slice into sticks about 3-4 inches long. Trim celery and cut into similar lengths. Slice cucumbers into rounds or sticks. Slice bell peppers into thin strips. Halve cherry tomatoes. Remove strings from snap peas if using. Dry veggies thoroughly.
  2. Prepare the dips: pour store-bought hummus, guacamole, and ranch dip into small bowls or ramekins. For homemade dips, prepare ahead and keep chilled until serving.
  3. Arrange the crackers: select a variety of crackers and place them in small piles or overlapping stacks around the board, alternating textures and colors.
  4. Assemble the board: place veggie sticks and slices in groups around the dips, creating colorful clusters. Add cherry tomatoes and snap peas in small bunches. Insert small bowls of olives or pickles if using. Garnish with fresh herbs.
  5. Add final touches: provide utensils for sharing dips, place small spreader knives or spoons in each dip bowl. Optionally drizzle olive oil or sprinkle sea salt on hummus.
  6. Serve immediately to keep veggies crisp and dips fresh. If prepping ahead, cover tightly and refrigerate, bringing to room temperature before serving.

Notes

Dry veggies thoroughly to avoid soggy dips. Soak carrot and celery sticks in ice water for 10 minutes to keep crisp. Keep crackers separate until serving to prevent sogginess. Mix lemon juice into dips to brighten flavors. Use a variety of crackers for texture and flavor contrast. Fresh herbs add aroma and visual appeal.
