A fresh, vibrant, and easy-to-assemble brunch board featuring seasonal spring vegetables, cheeses, pickled veggies, and sweet berries, perfect for celebrating the spring equinox with minimal fuss.

Ingredients

  • Assorted fresh spring vegetables (radishes, snap peas, baby carrots, cucumber slices)
  • Mixed fresh berries (strawberries, blueberries, raspberries)
  • Fresh herbs (mint, dill, basil)
  • Creamy goat cheese log
  • Sharp aged cheddar, sliced
  • Fresh mozzarella balls (bocconcini)
  • Marinated olives (Kalamata or Castelvetrano)
  • Pickled vegetables (pickled carrots or beets)
  • Prosciutto or thinly sliced cured meats (optional)
  • Whipped honey butter (unsalted butter whipped with local honey)
  • Herbed cream cheese spread (cream cheese mixed with fresh herbs and lemon zest)
  • Assorted crackers (multigrain, water crackers)
  • Rustic baguette, sliced thin

Instructions

  1. Rinse all fresh vegetables and berries under cold water. Slice cucumbers thinly and trim snap peas. Pat everything dry to prevent sogginess on the board. Pluck fresh herb leaves gently from stems; set aside.
  2. Slice the aged cheddar into thin pieces and cut the goat cheese log into bite-sized rounds. Drain mozzarella balls from their liquid and pat dry. If using cured meats, fold or roll slices for a neat look.
  3. In small bowls, whip softened butter with honey until light and fluffy. Mix cream cheese with chopped herbs and a little lemon zest for a bright spread.
  4. Slice the baguette into thin rounds. Arrange crackers and bread slices on one side of the board to create a base for toppings.
  5. Start by placing bowls of dips, olives, and pickled veggies spaced evenly. Fill in with cheese, meats, and fresh vegetables in small piles or clusters. Add berries and herbs last for pops of color and freshness. Vary the shapes and sizes so the board feels abundant and inviting.
  6. Drizzle a bit of extra honey over the whipped butter if desired and scatter a few extra herb sprigs for visual appeal.

Notes

Dry produce thoroughly after washing to avoid sogginess. Avoid overcrowding the board to highlight colors and textures. Assemble as close to serving time as possible for freshness. Prepping some elements a day ahead can save time. Toasted nuts can be added for extra crunch and aroma. For vegan or dairy-free options, substitute cheeses and spreads accordingly.
