  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil (or avocado oil)
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder (optional)
  • 1/2 tsp salt (plus more to taste)
  • 1/4 tsp black pepper
  • Juice of 1 lime (about 2 tbsp)
  • 2 tbsp water
  • 1 large ripe avocado
  • 1/4 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • Juice of 1/2 lime (about 1 tbsp)
  • 1 tbsp fresh cilantro, chopped (or parsley)
  • 1 small garlic clove, minced
  • Salt and pepper, to taste
  • 23 tbsp water (to thin avocado sauce)
  • 1 head butter lettuce or romaine (washed, leaves separated)
  • 1/2 cup cherry tomatoes, diced (optional)
  • 1/4 cup red onion, thinly sliced
  • Extra cilantro, chopped
  • Additional lime wedges (for serving)

Instructions

  1. Carefully wash and dry the lettuce leaves. Set aside the largest, most intact leaves for wrapping.
  2. Scoop the flesh from the avocado into a blender or food processor. Add Greek yogurt, lime juice, cilantro, and minced garlic. Season with salt and pepper. Blend until smooth, adding water to reach a creamy consistency. Taste and adjust seasoning.
  3. Dice cherry tomatoes, thinly slice red onion, and chop extra cilantro. Set aside for toppings.
  4. Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté for 2-3 minutes until softened.
  5. Stir in minced garlic and cook for 30 seconds.
  6. Add ground turkey, breaking it up with a spoon. Sprinkle with cumin, smoked paprika, chili powder (if using), salt, and black pepper. Cook for 5-7 minutes, stirring often, until turkey is cooked through.
  7. Pour in water and lime juice. Stir to combine and simmer for 2 more minutes until most liquid evaporates.
  8. Taste and adjust seasoning. Add more salt or lime if needed.
  9. Lay out lettuce leaves on a platter. Spoon turkey mixture into each leaf. Top with tomatoes, onions, and cilantro. Drizzle with avocado sauce.
  10. Garnish with extra lime wedges and serve immediately.

Notes

For best results, use sturdy lettuce leaves and ripe avocados. Prep the avocado sauce and toppings while the turkey cooks to save time. If the avocado sauce thickens, stir in a splash of water or lime juice before serving. The turkey filling can be made ahead and reheated; keep lettuce and sauce separate until serving.
