Fresh Watermelon Agua Fresca Recipe with Lime and Mint

A quick, easy, and refreshing summer drink made with fresh watermelon, lime juice, and mint leaves. Perfect for cooling down on hot days and impressing guests with a vibrant, natural flavor.

Ingredients

  • 4 cups (600 grams) seedless watermelon, cubed
  • Juice of 2 medium limes (about 3 tablespoons / 45 ml)
  • 1012 fresh mint leaves, washed and roughly chopped
  • 2 cups (480 ml) cold water
  • 1 to 2 tablespoons (1530 grams) sweetener (organic cane sugar, agave syrup, or honey)
  • Ice cubes for serving
  • Optional: pinch of sea salt
  • Optional: splash of tequila or rum for a boozy twist

Instructions

  1. Cut about 4 cups (600 grams) of seedless watermelon into chunks and remove any remaining seeds.
  2. Add the watermelon chunks, 10–12 lightly crushed fresh mint leaves, juice of 2 limes, 2 cups (480 ml) cold water, and 1 tablespoon (15 grams) sweetener to a blender.
  3. Blend on high for 1–2 minutes until smooth and vibrant pink with mint flecks.
  4. Optional: Pour the blended mixture through a fine mesh strainer into a large pitcher to remove pulp and mint bits.
  5. Taste and adjust sweetness by adding an additional tablespoon of sweetener if needed. Adjust thickness by adding more cold water ¼ cup (60 ml) at a time if desired.
  6. Refrigerate the pitcher for at least 30 minutes to chill and let flavors meld.
  7. Serve over ice cubes, garnished with extra mint leaves or a lime wedge.

Notes

Use ripe, fragrant watermelon for best flavor. Lightly crush mint leaves before blending to release aroma without bitterness. Straining is optional depending on texture preference. Chill for at least 30 minutes for best flavor. Adjust sweetness and water to taste. Fresh watermelon is recommended over frozen for best texture.
