A refreshing and vibrant summer salad combining crisp watermelon cubes, creamy feta cheese, and fresh mint leaves, dressed with lime juice and olive oil. Perfect as a light snack or a colorful side dish for warm days.

Ingredients

  • 4 cups (600g) seedless watermelon, cubed
  • 1 cup (150g) feta cheese, crumbled
  • ¼ cup (10g) fresh mint, finely chopped
  • 2 tablespoons (30ml) extra virgin olive oil
  • Juice of 1 medium lime (about 2 tablespoons / 30ml)
  • 1 teaspoon (5ml) honey (optional)
  • Pinch of salt
  • Light sprinkle of freshly ground black pepper

Instructions

  1. Wash the watermelon thoroughly. Cut into quarters, slice off the rind, and chop the flesh into roughly 1-inch cubes. Transfer to a mixing bowl.
  2. Rinse fresh mint leaves, pat dry, and finely chop about ¼ cup.
  3. In a small bowl, whisk together olive oil, lime juice, honey (if using), salt, and black pepper. Adjust seasoning to taste.
  4. Gently fold watermelon cubes with crumbled feta and chopped mint. Pour dressing over and toss lightly to combine without crushing the watermelon.
  5. Chill the salad in the refrigerator for 15-20 minutes before serving to allow flavors to meld. Serve cold.

Notes

Use firm, ripe watermelon to avoid mushy texture. Gently fold ingredients to keep watermelon and feta intact. Prepare no more than an hour before serving or keep dressing separate to prevent sogginess. Optional additions include toasted nuts, chili flakes, or cucumber for extra texture and flavor.
