  • 1 teaspoon lime zest (optional)

Instructions

  1. Slice the watermelon into 1-inch thick rounds, optionally removing the rind for a neat edge. Halve or quarter the rounds depending on serving size.
  2. In a mixing bowl, stir together Greek yogurt and honey or maple syrup if using, until smooth and slightly fluffy.
  3. Spread an even layer of the creamy yogurt over the watermelon slices using a spoon or offset spatula.
  4. Arrange fresh fruit toppings on top in a decorative pattern: start with a ring of blueberries, then add sliced kiwi, strawberries, and pomegranate seeds. Garnish with fresh mint leaves.
