Ingredients

Scale
  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons red food coloring (gel-based preferred)
  • 2 tablespoons buttermilk
  • 1 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 8 ounces (225g) cream cheese, softened
  • 1/3 cup (40g) powdered sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and well combined, about 1-2 minutes.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, sift together the all-purpose flour, cocoa powder, and salt.
  5. Slowly add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Avoid overmixing.
  6. Stir in the red food coloring, buttermilk, and white vinegar until the batter turns a vibrant red shade.
  7. Using an electric mixer, beat the softened cream cheese and powdered sugar until smooth and fluffy, about 2 minutes.
  8. Add the egg and vanilla extract to the cream cheese mixture and beat until fully incorporated and creamy.
  9. Pour half the red velvet batter into the prepared pan and spread evenly.
  10. Dollop half the cream cheese mixture over the batter in spoonfuls.
  11. Spread the remaining brownie batter on top, then dollop the rest of the cream cheese mixture over it.
  12. Use a toothpick or skewer to drag through the batter in a figure-eight or zigzag pattern to create a marbled swirl effect.
  13. Bake for 25-30 minutes, checking doneness by inserting a toothpick in the center; it should come out with moist crumbs but no wet batter.
  14. Let the brownies cool completely in the pan on a wire rack for at least 1 hour before cutting.

Notes

Do not overbake to keep brownies fudgy; use gel food coloring for vibrant red without thinning batter; swirl cream cheese gently for best marbled effect; room temperature eggs and butter improve batter texture; store airtight at room temperature up to 3 days or freeze for up to a month.
