These fun firecracker Jello shots are a colorful, sparkling, and kid-friendly treat that captures the joy of summer celebrations. Made with natural fruit juices and sparkling water, they offer a fizzy, jiggly snack perfect for parties and everyday fun.

  • 2 cups (480 ml) fruit juice (cranberry, cherry, or pomegranate recommended)
  • 4 tablespoons (about 40 grams) unflavored gelatin powder
  • 24 tablespoons (2550 grams) sugar or honey
  • 1 to 1 ½ cups (240 to 360 ml) chilled sparkling water
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • Optional: a drop or two of food coloring
  • Mini plastic cups or silicone molds for setting

Instructions

  1. Pour 1 cup (240 ml) of fruit juice into a medium bowl. Sprinkle 4 tablespoons (40 grams) of unflavored gelatin evenly over the surface. Let it sit for 5 minutes to bloom.
  2. In a medium saucepan, combine the remaining 1 cup (240 ml) of fruit juice with 2-4 tablespoons (25-50 grams) of sugar or honey. Warm over medium heat, stirring occasionally, until sugar dissolves and mixture is hot but not boiling (3-5 minutes).
  3. Remove saucepan from heat and stir the bloomed gelatin mixture into the warm juice until fully dissolved and smooth.
  4. Stir in 1 tablespoon (15 ml) fresh lemon juice. Gently fold in 1 to 1 ½ cups (240 to 360 ml) of cold sparkling water slowly to preserve fizz.
  5. Carefully pour the mixture into mini plastic cups or silicone molds. For layered colors, pour each color separately and chill each layer for about 30 minutes before adding the next.
  6. Place cups or molds on a flat surface in the refrigerator and chill for at least 3 hours or until firm.
  7. Once set, serve chilled. Pop silicone molds out gently or serve plastic cups as is.

Notes

Bloom gelatin properly to avoid lumps. Warm juice mixture without boiling to preserve gelatin setting power. Fold in sparkling water gently to keep fizz. Chill each layer for 30-40 minutes when layering colors. Store leftovers in airtight container in refrigerator up to 3 days; avoid freezing.
