  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper, to taste
  • Optional: Red pepper flakes, to taste

Instructions

  1. Cut sirloin steak into bite-sized cubes (roughly 1-inch pieces). Halve the baby potatoes and mince the garlic. Chop the parsley.
  2. Toss the halved potatoes in a mixing bowl with 2 tablespoons of olive oil, a generous pinch of salt, and freshly ground black pepper.
  3. Heat a cast iron skillet over medium-high heat and add the seasoned potatoes in a single layer. Cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender. Remove and set aside.
  4. Season the steak pieces with salt, pepper, and a pinch of red pepper flakes (optional).
  5. Add 1 tablespoon of olive oil to the same skillet and increase heat to high. Place the steak bites in a single layer and sear for 2-3 minutes per side. Remove and set aside.
  6. Lower the heat to medium, add 2 tablespoons of butter to the skillet, and let it melt. Stir in the minced garlic and cook for 30 seconds until fragrant.
  7. Return the potatoes and steak bites to the skillet and toss them in the garlic butter sauce until well-coated and heated through, about 2 minutes.
  8. Sprinkle with fresh parsley and serve immediately.
