Instructions

  1. Crack 4 large eggs into a mixing bowl. Add ½ cup small-curd cottage cheese. Whisk vigorously with a fork or whisk until the mixture is slightly frothy and the cottage cheese is mostly broken down but still has some texture (about 1-2 minutes).
  2. Preheat an 8-inch non-stick skillet over medium-low heat. Add 1 tablespoon unsalted butter and let it melt slowly, coating the pan evenly (about 2 minutes).
  3. Pour the egg and cottage cheese mixture into the skillet. Let it sit undisturbed for 15-20 seconds until the edges begin to set.
  4. Using a silicone spatula, gently fold the eggs from the edges toward the center. Cook for another 1-2 minutes, folding occasionally, until eggs look moist but mostly set.
  5. Add a pinch of salt and freshly ground black pepper to taste. Sprinkle 1-2 teaspoons of everything bagel seasoning evenly over the eggs. Fold once more to distribute the seasoning without breaking the curds.
  6. Remove from heat while the eggs are still slightly shiny and soft; they will continue to cook in residual heat (total cooking time about 5-6 minutes).
