  • 1/2 cup unsalted butter, softened

  • 1/2 teaspoon baking soda

  • 1/2 cup chopped walnuts (optional)
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using a hand mixer or stand mixer. Beat until light and fluffy, about 2-3 minutes.
  3. Add the mashed bananas, egg, and vanilla extract to the butter-sugar mixture. Beat until fully combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture, beating just until combined. Avoid overmixing to keep the cookies tender.
  6. Fold in the chopped walnuts if using.
  7. Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden and the tops appear set. Avoid overbaking for the best texture!
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  10. While the cookies are cooling, prepare the icing by whisking together powdered sugar, milk, and vanilla extract in a medium bowl until smooth.
  11. Once the cookies are fully cooled, drizzle or spread the icing on top. Let it set for a few minutes before serving.
