  • 1/2 cup (100g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (120g) apple butter
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Mix in the apple butter, egg, and vanilla extract until smooth and well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing.
  6. Using a cookie scoop or tablespoon, scoop the dough and roll it into balls. Place them on the prepared baking sheets, leaving about 2 inches (5 cm) between each.
  7. Bake for 10-12 minutes, or until the edges are set and the tops look slightly underbaked.
  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
