  • 1 large egg
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder

  • 1 teaspoon Worcestershire sauce

  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 oz egg noodles
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (optional)

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Mix until just combined.
  2. Roll the mixture into small balls, about 1 inch in diameter. You should get around 20-25 meatballs.
  3. Heat olive oil in a large skillet over medium-high heat. Add the meatballs in batches, cooking until browned on all sides. Set aside.
  4. In a separate bowl, whisk together beef broth, sour cream, flour, Dijon mustard, paprika, salt, and pepper until smooth.
  5. Place the browned meatballs into the crockpot. Pour the stroganoff sauce over the meatballs, ensuring they are well-coated.
  6. Cover the crockpot and cook on low for 4-5 hours or high for 2-3 hours.
  7. About 30 minutes before serving, cook the egg noodles according to package instructions. Drain and set aside.
  8. Add the cooked noodles to the crockpot and gently stir to coat them in the sauce. Let everything heat through for about 10-15 minutes.
  9. Garnish with fresh parsley if desired and serve warm.
