  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 4 cups chicken or vegetable broth
  • 1 tbsp Italian seasoning
  • 8 oz lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil, for garnish
  • Salt and pepper, to taste

Instructions

  1. Brown the ground Italian sausage in a large skillet over medium heat, breaking it into small pieces as it cooks. Drain any excess grease.
  2. Add the diced onion to the skillet and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute, until fragrant.
  3. Transfer the cooked sausage and onion mixture to your Crockpot. Add the crushed tomatoes, tomato paste, chicken broth, and Italian seasoning. Stir everything to combine.
  4. Break the lasagna noodles into bite-sized pieces and add them to the Crockpot. Stir gently to ensure they’re submerged in the liquid.
  5. Set your Crockpot to cook on low for 6 hours or high for 3 hours. Stir occasionally to prevent the noodles from sticking to the bottom.
  6. About 30 minutes before serving, stir in the ricotta cheese and half of the shredded mozzarella. Let it melt into the soup to create a creamy texture.
  7. Serve the soup hot, topped with the remaining mozzarella, grated Parmesan, and fresh basil.
