  • 2 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 2 cans (15 oz each) white beans (Great Northern or cannellini)
  • 1 cup corn (frozen, fresh, or canned)
  • 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
  • 1 can (4 oz) green chilies
  • 1 packet taco seasoning
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese, cubed
  • Optional toppings: shredded cheese, sour cream, sliced avocado, fresh cilantro, tortilla chips

Instructions

  1. Trim excess fat off the chicken breasts, open all canned ingredients, and measure out your spices.
  2. Place the chicken breasts at the bottom of your crockpot.
  3. Add the chicken broth, canned white beans, corn, Rotel tomatoes, and green chilies on top of the chicken.
  4. Sprinkle the taco seasoning and ranch seasoning mix evenly over the ingredients without stirring.
  5. Cut the cream cheese into small cubes and place them on top of everything.
  6. Cover the crockpot with the lid and cook on low for 6-8 hours or high for 3-4 hours.
  7. Remove the chicken breasts from the crockpot and shred them using two forks.
  8. Return the shredded chicken to the crockpot and stir everything together until the cream cheese is fully incorporated.
  9. Serve hot with your favorite garnishes like shredded cheese, sour cream, or fresh cilantro.
