Hawaiian Chicken Sheet Pan - featured image

A hassle-free, crowd-pleasing meal packed with tropical flavors, featuring tender chicken, caramelized pineapple, and colorful veggies all cooked on one sheet pan.

Ingredients

Scale
  • 6 boneless, skinless chicken thighs
  • 1 cup pineapple chunks (fresh or canned in juice)
  • 3 bell peppers (red, yellow, and green)
  • 1 red onion
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 minced garlic cloves
  • 1 tablespoon grated ginger
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional garnish: fresh cilantro, sesame seeds, lime wedges

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or a silicone baking mat.
  2. In a mixing bowl, whisk together 1/3 cup low-sodium soy sauce, 2 tablespoons honey, 1 tablespoon grated ginger, 2 minced garlic cloves, 1 tablespoon lime juice, and 1 teaspoon sesame oil (optional).
  3. Place 6 boneless, skinless chicken thighs in a large resealable bag or shallow dish. Pour the marinade over the chicken, ensuring they’re evenly coated. Cover and refrigerate for at least 20 minutes, or up to 2 hours for maximum flavor.
  4. While the chicken marinates, cut 3 bell peppers (any colors), 1 red onion, and 1 cup of pineapple chunks into bite-sized pieces. Toss them in a mixing bowl with 2 tablespoons olive oil, a pinch of salt, and a dash of black pepper.
  5. Spread the marinated chicken evenly across the sheet pan. Scatter the veggies and pineapple around the chicken, ensuring everything is in a single layer for even roasting.
  6. Roast in the preheated oven for 25-30 minutes, flipping the chicken halfway through. Check for doneness—chicken should reach an internal temperature of 165°F (74°C).
  7. For an extra touch, turn the oven to broil for the last 2-3 minutes. This will give the chicken and pineapple a beautiful caramelized finish.
  8. Garnish with fresh cilantro, sesame seeds, and lime wedges. Serve hot over steamed rice or with a side of roasted sweet potatoes for a complete meal.
