  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
  2. Peel and slice the carrots into evenly-sized pieces. If using baby carrots, rinse them.
  3. In a mixing bowl, whisk together honey, olive oil, melted butter, minced garlic, soy sauce, salt, and pepper to make the glaze.
  4. Toss the carrots in the glaze mixture until well-coated.
  5. Spread the carrots evenly on the prepared baking sheet in a single layer.
  6. Roast the carrots in the oven for 20-25 minutes, flipping halfway through, until tender and caramelized.
