  • 2 cups shredded cooked chicken
  • 1 cup ricotta cheese
  • 1 cup grated parmesan cheese
  • 1/2 cup chopped sun-dried tomatoes

  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 minced garlic cloves
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a baking sheet to prevent sticking.
  3. In a large mixing bowl, combine shredded cooked chicken, ricotta cheese, grated parmesan cheese, chopped sun-dried tomatoes, salt, pepper, and Italian seasoning. Mix until well combined.
  4. To make the sauce, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in heavy cream and chicken broth, whisking to combine. Add grated parmesan cheese and simmer for 5 minutes until thickened.
  5. Spread a thin layer of sauce in the bottom of a 9×13-inch baking dish to prevent sticking.
  6. Assemble the rolls: Spread 2-3 tablespoons of the chicken mixture onto each lasagna noodle. Roll the noodle up tightly and place it seam-side down in the baking dish. Repeat with the remaining noodles and filling.
  7. Pour the remaining sauce over the lasagna rolls, making sure each roll is well-coated. Sprinkle additional parmesan cheese on top.
  8. Cover the dish with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 10 minutes until the cheese is bubbling and golden.
  9. Remove from the oven and let the dish rest for 5 minutes before serving. Garnish with chopped parsley.
