  • 1 teaspoon vanilla extract
  • 8 ounces (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 2 ½ cups (300g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract until smooth.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined. Avoid overmixing.
  5. Divide the batter evenly among the liners, filling each about ¾ full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Allow the cupcakes to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely before frosting.
  8. In a large bowl, beat the cream cheese and butter together until smooth. Add the powdered sugar, vanilla extract, and cinnamon, and continue beating until fluffy and well combined.
