  • 34 lbs beef chuck roast
  • 4 cups low-sodium beef broth
  • 1 large onion, thinly sliced
  • 45 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper to taste
  • 46 baguettes or hoagie rolls
  • Provolone cheese slices

Instructions

  1. Trim excess fat from the beef chuck roast. Season generously with salt and black pepper.
  2. In a skillet, sauté the sliced onion and minced garlic for 2-3 minutes over medium heat until softened and fragrant.
  3. Place the beef roast into the slow cooker. Arrange the sautéed onions and garlic on top.
  4. In a mixing bowl, combine the beef broth, Worcestershire sauce, soy sauce, dried thyme, and bay leaves. Pour this mixture over the roast and cover the slow cooker.
  5. Set the slow cooker to low heat and cook for 8-10 hours, or until the beef is fork-tender. Alternatively, cook on high for 4-5 hours.
  6. Remove the beef from the slow cooker and shred it using two forks. Return the beef to the broth to keep it moist and flavorful.
  7. Slice the baguettes or rolls lengthwise and toast them lightly in an oven or on a stovetop griddle.
  8. Layer shredded beef onto the bottom half of each baguette. Add a slice or two of provolone cheese. Place the sandwiches under the broiler for 1-2 minutes to melt the cheese.
  9. Strain the cooking liquid into a saucepan and heat it over low heat. Serve the warm au jus alongside the sandwiches for dipping.
