Irresistible Sweet and Savory Pineapple Chicken Recipe

A delicious one-pan meal featuring tender chicken, juicy pineapple chunks, and perfectly cooked rice, combining sweet and savory flavors for a tropical twist.

  • 1 lb boneless, skinless chicken thighs or breasts, cubed
  • 1 cup fresh pineapple, diced into bite-sized chunks
  • 2 cups cooked jasmine rice or long-grain white rice
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced or finely grated
  • 1 tbsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • 2 green onions, thinly sliced
  • 1 red bell pepper, diced
  • 1 tbsp sesame seeds (optional)
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine soy sauce, honey, garlic, and ginger. Add chicken cubes and toss to coat. Cover and marinate for at least 15 minutes or up to 2 hours in the fridge.
  2. Prepare jasmine rice according to package instructions and set aside.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add marinated chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from skillet and set aside.
  4. In the same skillet, add more oil if needed. Add diced pineapple and bell pepper. Cook for 3-4 minutes until pineapple is caramelized and peppers are slightly tender.
  5. Return chicken to the skillet and mix with pineapple and peppers. Add cooked rice and toss everything together until well combined.
  6. Top with sliced green onions and a sprinkle of sesame seeds before serving. Serve warm.
