  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green chilies
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper, to taste
  • 810 small flour tortillas
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a mixing bowl, combine the shredded chicken, 1 cup of Monterey Jack cheese, sour cream, green chilies, garlic powder, and onion powder. Mix until well combined.
  3. In a large skillet, melt the butter over medium heat. Add the flour and whisk constantly for 1-2 minutes to create a roux.
  4. Gradually pour in the chicken broth while whisking continuously to prevent lumps. Once smooth, add the milk and continue whisking until the sauce thickens, about 3-4 minutes.
  5. Reduce the heat to low and stir in 1 cup of shredded Monterey Jack cheese. Stir until the cheese is completely melted and the sauce is smooth. Season with salt and pepper to taste.
  6. Lay a tortilla flat and spoon about 2-3 tablespoons of the chicken mixture onto the center. Roll it up tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
  7. Pour the creamy white sauce evenly over the rolled tortillas in the dish, ensuring every inch is covered.
  8. Sprinkle 1 cup of shredded Monterey Jack cheese over the sauce-covered enchiladas.
  9. Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.
  10. Allow the enchiladas to cool for 5 minutes before serving.
