Instructions

  1. Make the Secret Sauce: In a small bowl, mix ½ cup mayonnaise, 1 tablespoon yellow mustard, 1 teaspoon smoked paprika, 1 teaspoon honey, and 1 teaspoon pickle juice. Stir well to combine. Taste and adjust salt and pepper as needed. Cover and refrigerate while you prepare the burgers.
  2. Prepare the Patties: In a mixing bowl, gently combine 1 lb ground beef with 1 teaspoon kosher salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder. Avoid overmixing.
  3. Shape the Patties: Divide the beef into 8 equal portions (about 2 ounces or 55g each). Shape each into a small patty about 3 inches in diameter, slightly wider than buns. Make a shallow indentation in the center of each patty with your thumb.
  4. Toast the Buns: Heat a non-stick skillet or cast iron pan over medium heat. Spread butter on the cut side of each slider bun. Toast butter side down until golden and crisp, about 1-2 minutes. Set aside.
  5. Cook the Patties: Increase heat to medium-high. Place patties in the hot skillet, leaving space between each. Cook about 3 minutes on first side without moving. Flip and add half a slice of cheddar cheese on each patty if using. Cook another 2-3 minutes for medium doneness (160°F internal temperature).
