Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Shred about 2 medium zucchinis and squeeze out excess moisture using a towel.
  3. In a large bowl, whisk melted butter, granulated sugar, and brown sugar until smooth.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract and sour cream or Greek yogurt.
  5. In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
  6. Gradually fold dry ingredients into wet mixture until just combined; do not overmix.
  7. Fold in squeezed zucchini and chocolate chips (and nuts if using) gently.
  8. Transfer batter to prepared loaf pan and smooth the top. Optionally, sprinkle extra chocolate chips on top.
  9. Bake for 50-60 minutes, checking doneness at 50 minutes with a toothpick. Tent with foil if top browns too quickly.
