  • 3 large ripe bananas, mashed
  • 3 large eggs, room temperature
  • 1/4 cup coconut oil, melted
  • 1/4 cup raw honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 teaspoon ground cinnamon (optional)
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5-inch loaf pan with coconut oil or line it with parchment paper.
  2. In a medium bowl, mash the ripe bananas thoroughly with a fork or potato masher until mostly smooth with a few small chunks remaining.
  3. Add the eggs, melted coconut oil, honey, and vanilla extract to the mashed bananas. Whisk together gently until well combined.
  4. In a separate large bowl, whisk together the almond flour, coconut flour, baking soda, salt, and cinnamon. Break up any lumps.
  5. Pour the wet ingredients into the dry ingredients and fold with a spatula until just combined, avoiding overmixing.
  6. If using nuts, fold them in now.
  7. Transfer the batter to the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Tent with foil if top browns too fast.
  9. Remove from oven and let cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas with brown spots for best sweetness and moisture. Avoid overmixing to keep bread tender. If bananas are less ripe, add an extra tablespoon of honey or maple syrup. Tent with foil if top browns too quickly. Let bread cool completely before slicing to prevent crumbling. For extra moistness, add a tablespoon of plain or dairy-free yogurt.
