  • ¼ teaspoon salt
  • 5 large eggs, separated (room temperature)
  • 1 cup (200g) granulated sugar, divided
  • 1/3 cup (80ml) whole milk
  • 1 teaspoon pure vanilla extract
  • 1 can (12 oz/354 ml) evaporated milk
  • 1 can (14 oz/396 ml) sweetened condensed milk
  • 1/4 cup (60 ml) heavy cream (use coconut cream for dairy-free)
  • 1 cup (240 ml) heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch (23×33 cm) baking pan lightly with butter and dust with flour, tapping out excess.
  2. In a bowl, sift together all-purpose flour, baking powder, and salt. Set aside.
  3. Separate the 5 large eggs into yolks and whites carefully.
  4. Beat the egg whites on medium speed until soft peaks form. Gradually add ½ cup sugar, continuing to whip until stiff peaks form.
  5. In a separate bowl, whisk the egg yolks with the remaining ½ cup sugar until pale and fluffy. Add whole milk and vanilla extract, mixing well.
  6. Gently fold the sifted flour mixture into the yolk mixture until combined.
  7. Carefully fold the whipped egg whites into the batter in batches, maintaining as much air as possible.
  8. Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  9. Let the cake cool in the pan on a wire rack for about 15 minutes. Poke holes all over the cake with a fork or skewer.
  10. In a bowl, whisk together evaporated milk, sweetened condensed milk, and heavy cream until smooth.
  11. Slowly pour the milk mixture evenly over the cake, allowing it to absorb gradually. Refrigerate for at least 2 hours, preferably overnight.
  12. Before serving, whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  13. Spread the whipped cream evenly over the soaked cake. Top with fresh mixed berries just before serving.

Notes

Use room temperature eggs for easier whipping. Pour the milk mixture slowly to avoid sogginess. Chill the cake overnight for best flavor and texture. For dairy-free, substitute coconut milk and cream. Frozen berries can be used if thawed and drained well.
