  • 1 teaspoon vanilla extract
  • 1 cup (100g) finely shredded carrots
  • 1/2 cup (75g) grated apple
  • 1/2 cup (120g) crushed pineapple (drained)
  • 1/2 cup (75g) raisins
  • 1/3 cup (30g) shredded coconut (optional)
  • 1/2 cup (50g) chopped nuts (walnuts or pecans)

Instructions

  1. Preheat the oven to 375°F (190°C). Line your muffin tin with parchment liners or grease each cup lightly.
  2. In a large mixing bowl, whisk together whole wheat flour, baking soda, ground cinnamon, and salt.
  3. In a medium bowl, combine applesauce, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients and gently stir until just combined. Avoid overmixing.
  5. Fold in shredded carrots, grated apple, crushed pineapple, raisins, shredded coconut, and chopped nuts.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
