  • 1 cup fresh blueberries
  • 1 cup fresh raspberries (optional)
  • 1 cup fresh kiwi or green grapes, sliced (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a medium bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl, cream softened butter with granulated sugar until light and fluffy, about 2-3 minutes with an electric mixer.
  3. Add egg and vanilla extract to the butter mixture and beat until combined.
  4. Gradually add dry ingredients and mix just until incorporated, being careful not to overmix.
  5. Press dough evenly into a greased or parchment-lined 9-inch pizza pan to about ¼-inch thickness.
  6. Bake crust for 15-18 minutes until edges are golden brown and center is set. Let cool completely on a wire rack.
  7. Beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy.
  8. Whip chilled heavy cream until soft peaks form, then gently fold into cream cheese mixture until combined.
  9. Spread cream cheese topping evenly over cooled cookie crust.
  10. Arrange sliced strawberries in horizontal stripes across the pizza.
  11. Add a section of blueberries in the upper left corner to represent the flag’s blue field.
  12. Optionally add raspberries for extra red color and kiwi or grapes as a green border.
  13. Chill assembled fruit pizza in refrigerator for at least 30 minutes before serving.

Notes

Chill the crust completely before adding the topping to prevent sogginess. Use a sharp serrated knife and wipe clean between slices to avoid fruit dragging. The crust can be made a day ahead and stored at room temperature wrapped tightly. For dairy-free version, substitute cream cheese and heavy cream with vegan alternatives.
