  • 2 tsp vanilla extract (for buttercream)
  • 23 tbsp heavy cream or whole milk (adjust for consistency)
  • Blue gel food coloring
  • White gel food coloring
  • Optional decorations: edible silver pearls or star-shaped sprinkles, fresh edible flowers in cool tones

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, or line them with parchment rounds.
  2. In a medium bowl, whisk together sifted flour, baking powder, baking soda, and salt. Set aside.
  3. Using a mixer, beat softened butter and granulated sugar on medium speed for 4–5 minutes until light and fluffy.
  4. Beat in eggs one at a time, fully incorporating each before adding the next. Mix in vanilla extract.
  5. With mixer on low, alternately add one-third of flour mixture and half of buttermilk, repeating once more and finishing with last third of flour. Stop mixing as soon as batter is smooth.
  6. Divide batter evenly into prepared pans, smooth tops with spatula, and tap pans gently to remove air bubbles.
  7. Bake for 25–30 minutes until a toothpick inserted in center comes out clean or with a few moist crumbs.
  8. Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Beat softened butter for buttercream until creamy (about 2 minutes). Gradually add powdered sugar alternating with cream until fluffy. Stir in vanilla extract.
  10. Divide buttercream into three bowls. Mix blue gel food coloring into two bowls (one darker, one lighter), leaving third bowl white.
  11. Place one cake layer on serving plate and spread a generous layer of blue buttercream on top.
  12. Apply a thin crumb coat over entire cake and chill for 20 minutes to set.
  13. Using piping bags, alternate between blue shades and white buttercream to pipe gentle wave shapes around cake sides and top. Chill briefly to firm design.
  14. Add optional edible pearls or star-shaped sprinkles for a celestial touch.

Notes

Chill the frosting between piping layers to make wave shapes pop and prevent colors from bleeding. Buttercream should be cool but spreadable for best piping results. Avoid overmixing batter to keep cake tender. Practice piping on parchment paper if new to the technique. Use room temperature eggs and buttermilk for smooth batter.
