  • 1 small wheel Brie cheese (about 8 ounces / 225 grams)
  • 3 tablespoons fig jam
  • 1/4 cup shelled pistachios (about 30 grams), roughly chopped
  • 1 tablespoon honey (optional)
  • 1 teaspoon fresh thyme leaves (optional)
  • Crackers or sliced baguette for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the brie on a cutting board and gently score the top rind in a crisscross pattern about 1/8 inch (3 mm) deep.
  3. Spread the 3 tablespoons of fig jam evenly over the top of the brie.
  4. In a small bowl, combine the roughly chopped pistachios and fresh thyme leaves if using.
  5. Sprinkle the pistachio mixture over the fig jam and press down lightly so it sticks.
  6. Place the brie in an oven-safe baking dish or small cast-iron skillet.
  7. Bake for 15 to 20 minutes until the brie is soft and melty but not oozing excessively.
  8. Check for doneness after 15 minutes; the cheese should look puffed and slightly golden around the edges.
  9. Remove from oven and drizzle honey over the top if desired.
  10. Transfer to a serving platter immediately and serve warm with crackers, sliced baguette, or fresh fruit.
