  • 3 large eggs, cooked sunny-side-up or scrambled
  • 6 slices of bacon, cooked until crispy
  • 1 ripe avocado, sliced or mashed
  • Fresh lettuce leaves (optional: spinach or arugula)
  • 1 medium tomato, sliced
  • Cheese slices (optional: cheddar or Swiss)
  • Mayonnaise (or a mix of mayo and Dijon mustard)
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. Heat a skillet over medium heat and cook the bacon until crispy, about 6-8 minutes. Remove and drain on paper towels.
  2. Toast your bread slices until golden brown. Set aside.
  3. In the same skillet, cook the eggs sunny-side-up or scramble them, depending on your preference. Season with salt and pepper.
  4. Slice or mash the avocado, adding a pinch of salt for flavor.
  5. Spread mayo (or mayo-Dijon mix) onto one side of each bread slice. Layer the ingredients as follows: Bottom layer: Bread slice, lettuce, tomato, bacon. Middle layer: Bread slice, cheese, eggs, avocado. Top layer: Bread slice with mayo.
  6. Cut the sandwich into halves or quarters with a sharp knife. Serve immediately while everything is warm and fresh.
