Perfect Shrimp Scampi Recipe with Garlic Butter Sauce

Tender shrimp bathed in a silky garlic butter sauce, paired with al dente pasta, fresh parsley, and a hint of lemon for a restaurant-quality meal at home.

  • 1 lb large shrimp, peeled and deveined, tails on or off
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/3 cup dry white wine
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, finely chopped
  • Salt and pepper to taste
  • 8 oz pasta (spaghetti or linguine), cooked al dente

Instructions

  1. Boil a large pot of salted water and cook pasta until al dente, according to package instructions. Reserve 1/2 cup of pasta water before draining.
  2. Heat 2 tablespoons of olive oil and 3 tablespoons of butter in a large skillet over medium heat.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add shrimp to the skillet in a single layer. Season with salt, pepper, and red pepper flakes if desired. Cook for 2-3 minutes per side, or until shrimp are pink and opaque.
  5. Pour in 1/3 cup of dry white wine and let it simmer for 2 minutes to cook off the alcohol.
  6. Stir in 2 tablespoons of fresh lemon juice and the reserved pasta water. Toss to combine.
  7. Add cooked pasta to the skillet and gently toss with tongs to coat the noodles in the sauce.
  8. Sprinkle with chopped parsley and adjust seasoning if needed. Serve immediately.

Notes

Don’t overcook the shrimp to avoid rubbery texture. Use fresh garlic for the best flavor. Adjust the sauce consistency by simmering or adding pasta water as needed.
